Vegan Bar For One

3 Ingredients – Vegan – Healthy – Frosting– Nut Butter–Just for one

For several months now, I found myself lurking for vegan recipes: not that I eat exclusively vegan, but I find most of the recipes so appetizing, easy and full of good ingredients that I seem to develop a taste for it. That’s like that, like you surely do yourself, by looking for great inspiring recipes, that I create my own.

These past months, I also found out that I am particularly addicted to two ingredients: oats and peanut butter. Well, the second one is obviously not odd, but maybe the first one a little.

So the combination of the two is…deadly.

I don’t find too difficult ‘not to eat’ something when I don’t really want to at the moment, but when I have one bite of something with oats and/or peanut butter, well…let’s say it is hard not to eat…not the whole bar but rather not all the bars. So I really have to give them to whomever want them!

My friends from my equestrian centre, to whom I love bring goods, told me they feel just the same: bars with oats are addictive!

But this is the two main ingredients of this bar! And guess what, there is only one more! How great and easy is that!

Third ingredient is date.

As you may know, date is a common ingredient in vegan recipes and bars recipes. It creates a smooth flavour, brings sweetness to the goods, and helps binding the ingredients together.

This vegan bar for one doesn’t need anything more; except for a frosting, and you have it! What’s more, you just have to use almost the same ingredients as for the bar. Flour oats, peanut butter and golden syrup. Just mix them all with a fork and spread it on the bar. The frosting/kind of fudge is really malleable so you can even do it with your fingers (is that bad? I don’t think so if the bar is just for you, as it obviously should be ;))

  • 55 g dates    1/3 cup
  • 37 g oats  1/3 cup
  • 30 g peanut butter –natural style works great- 2 tbsp
  • 20 g Peanut Butter  1 tbsp + 1 tsp
  • 10 g golden syrup 1 tbsp
  • 7 g oat flour 1 full tbsp


  1. For the bar: In a blender, put the dates first, then the oats and peanut butter.

  2. Mix by impulse until a thick paste forms.
  3. Shape the paste in a rectangle form the best you can or with a rectangle cutter.
  4. Place in the fridge for just a few moment if you like or just do the frosting right away.
  5. For the frosting: grind you oats on the same blender to form oat flour if you don’t have any.
  6. Put the oat flour on a tiny bowl and pour the peanut butter and golden syrup. Mix with a for until everything combined and thick. Spread on your bar with your fingers (you can actually have a really clean and smooth frosting using your fingers) the best you can and place in the fridge for  30 min or enjoy right away.
