A fudgy brownie is always tempting but you can find yourself hesitate to take one bite because of the consequent amount of sugar and butter. Lucky you, you don’t have to hesitate anymore! This fudgy brownie has a really reasonable amount of butter and sugar and still tastes amazing.I made this brownie with a Peanut Butter filling and frosting to introduce the flavor in my family: they really weren’t familiar with peanut butter recipe! Here it is more hazelnut spread and that’s it.
Fortunately more and more supermarkets imports this awesome product in Europe (and you know you can easily make your own with peanuts and a good blender!) so I can develop more and more peanut butter recipes.
The filling and the frosting are made from exactly the same ingredients so you won’t have too many bowls running everywhere, and they are so light that you can bite without any guilt in this satisfying chocolate craving bake.
Piece of advice: do not prevent you from eating what you like, just do it differently if that matters for you 😉

Fudgy brownies bars
For the brownie
- 76 g butter 1/3 cup
- 113 g semi-sweet chocolate 4 ounces
- 60 g flour 1/3 cup + 2 tbsp
- ½ tsp baking powder
- 100 g brown sugar 1/2 cup
- 2 eggs
- ½ tsp vanilla essence
- 1 crushed biscuit/one handful of crushed pecans -optional adds-in-
For the filling and frosting
- 20 g - 20 g butter (half melted, other half room temperature) 1 tbsp - 1 tbsp
- 20 g - 20 g confectioner's sugar 2 tbsp - 2 tbsp
- 62 g - 62 g peanut butter 1/4 cup - 1/4 cup
Preheat the oven at 325°F (160°C) and grease a 8" (20 cm) square pan.
Prepare the brownie: Melt the butter and chocolate in a saucepan. Let cool for a few minutes.
Meanwhile, mix the flour, baking powder, and salt in a medium bowl.
Pour the sugar in the cooled chocolate mixture and whisk.
Add the eggs one by one, mixing well after each addition.
Then, add the vanilla extract and the flour and mix well. Add the crushed biscuit and pecans if you chose to add them.
Pour one half of the batter into prepared pan.
Prepare the filling: Mix all ingredients together and spoon drop of the filling in the batter evenly on the surface of the brownie batter. Pour the remaining brownie batter on the filling.
Bake for 35-40 minutes, checking at the 30' mark.
While the brownie is cooling, prepare the frosting:With a hand mixer fitted with a paddle attachment or by hand, mix all the ingredients together until smooth. Spread evenly on the cooled brownie.
