Healthy Brownie Bar

These slices can easily be made without the peanut butter layer or with another spread or nut butter.

I have become kind of a big fan of bars, slices, squares…anything with these shapes. And crunchy. And more precisely anything that contains oats or peanut butter (or both of course!) is fine with me. BUT, but, it is also nice to have ‘chocolate’ once in a while, with a fudgy texture and cakey flavor. But still a snack, still a bar, and even if there isn’t actual chocolate in it, it is exactly like there was.

That’s why, after my Fudgy Brownies bars and Extra Fudgy Salted Caramel Brownie Bars, I present you my Fudgy & Healthy brownie.

Well, if you like brownies, if you do not mind banana and certainly don’t mind the healthier version, let’s appreciate this lovely bar, shall we 🙂

Banana brings flavor and fudginess to the brownie and comes along very well with melted butter and brown sugar. As for the banana,the small amount of flour contributes to give a very fudgy brownie. Be really careful not to overbake it, as you do not want a dry cake instead of a perfect healthy fudgy brownie!

Filling is optional but, as with every bake, highly recommended. You can of course change for something you prefer like any other nut butter or even a spread.

Amazing Easy & Fudgy Brownie Bars {made with no chocolate} With Peanut Butter Center

These brownie bars are made with a banana and does not contain chocolate. They are so easy, burst with flavor and are perfect for any brownie craving.

Ingredients

For the brownie:

  • 1 medium banana ripe and mashed
  • 170 g granulated sugar 1/2 cup +1/3 cup
  • 25 g brown sugar 2 tbsp
  • 115 g unsalted butter -melted- 1/2 cup
  • 1 tbsp vanilla extract
  • 100 g all-purpose flour 3/4 cup + 1 tbsp
  • 15 g good quality cocoa powder 2 tbsp

For the filling:

  • 110 g cream cheese 4 ounces
  • 28 g unsalted butter -room temperature-
  • 1/2 egg
  • 1/4 tsp vanilla extract
  • 30 g confectioner's sugar 2 tbsp + 1 tsp
  • 100 g peanut butter -I used crunchy- 1/3 cup + 1 tbsp
  • 6 peanut butter cups, halved optional

Instructions

  1. Preheat the oven at 320°F and line a long loaf pan with aluminum foil or parchment paper, leaving an overhang on the sides to lift the finished brownies out. 

  2. For the brownie:

    In a medium bowl, whisk the mashed banana with the sugars.

  3. Add the slightly cooled melted butter and vanilla extract to the bowl and mix well.

  4. Finally, add the flour and cocoa powder and mix just until incorporated.

  5. Pour half of the batter in the pan, trying to spread it everywhere evenly.

  6. For the filling:

    With a hand-held or stand mixer fitted with a paddle or whisk attachment, beat the cream cheese and butter until smooth., about 30 seconds. 

  7. Add vanilla and the half egg and continue beating until incorporated. 

  8. Slowly add the sugar, and when incorporated, add the peanut butter. Beat until smooth.

  9. Spread the filling on the batter (in the loaf pan) as evenly as you can.

  10. Pour the other half of the brownie batter on the filling, always as evenly as possible.

  11. If you want to, put a half of a peanut butter cup for each serving.

  12. Bake for 25-30 minutes, not more in order to have a beautiful fudgy brownie.

Recipe Notes

*For bigger slices, cut the brownie in 6.

**These bars are amazing after one day in the fridge.

***You can double the filling recipe to make a frosting (after the brownie is completely cooled).
