You know, I would love to celebrate Easter every week-end, but eating rich chocolate cake so often isn’t maybe the best idea to live a healthy life. So, instead, I fulfilled my chocolate craving with this guy. And it was good.

Healthy {Triple} Chocolate Muffin {For One}
Ingredients
- 1/2 ripe and mashed banana
- 1/2 egg
- 14 g cashew butter 1 tbsp
- 14 g golden syrup -or maple syrup or agave- 1 heaped tbsp
- 10 ml buttermilk or any milk 1 tbsp + 1 tsp
- 40 g whole-wheat flour 1/3 cup
- 10 g good quality cocoa powder 1/4 cup
- 1/2 tsp baking powder
Optional for a triple chocolate version
- 1 tbsp chocolate chips add at the end of the mixing
- 1 tbsp homemade ganache top the muffin with it while still warm
Instructions

Preheat your oven at 400°F (200°C) first, and prepare 1 muffins liner in a muffin pan (or grease only 1 cavity).

With a rubber spatula or a wooden spoon in a medium bowl, mix the flour, cocoa powder and baking powder. Set aside.

In another bowl, mash the ripe banana with a fork. Whisk in the egg, cashew butter, golden syrup and buttermilk.

Fold the dry ingredients in the wet ingredients, and mix everything together with your rubber spatula or wooden spoon. DO NOT OVERMIX the batter. 10 to 15 seconds are enough to combine the two preparations.

With an ice-cream scoop, fill the liners with the batter.

Bake for 5 minutes.

Lower your oven temperature to 350°F (180°C) and bake for a further 15 minutes.

Let cool before enjoying!
