The Very Best Vegan Brownie
This brownie is many awesome things: healthy, vegan, super tasty, fudgy, refined-sugar free, and for one or two servings only!
Ingredients
- 165 grams medjool dates
- 40 ml almond milk -or any plant-based milk-
- 27 grams almond butter -or any nut butter-
- 20 grams banana
- 30 grams coconut sugar
- 35 grams almond flour
- 20 grams cocoa powder
- 1/3 tsp baking powder
- 1 pinch baking soda
- walnuts & dark chocolate chips -optional-
Instructions
-
Boil some water and pour on the dates -in a bowl- and let sit for about 15 min.
Meanwhile, preheat your oven at 180°C (350°F) and line a 8 x 15 cm (3x6 inch) pan with parchment paper.
-
Drain the water of the dates and add in a small blender.
Add also: almond milk, almond butter, and banana.
-
When smooth, add in a medium bowl. Add the almond flour, cocoa, sugar, baking powder and baking soda. Mix with a spatula. Fold in walnuts and chocolate chips if using.
-
Drop the thick (it's brownie!) batter in the pan, and even it out with an offset spatula or a spatula.
-
Bake for 30 minutes tops, then remove and let cool.
Enjoy!!
