This is a wonderful recipe to make ahead for breakfast: make your crust the night before in 5 minutes and wake up making a vegan apple pie for one in the morning in 15!
Well, maybe you’ll think it’s not exactly an apple pie but if so, I’ll tell you this: if you close your eyes while eating, it IS an apple pie 😉
And frankly, it has much more crust that an apple pie slice so, win-win.
I tried two versions of this.
Two Vegan Versions Of The Apple Pie
Coconut flour VS All-purpose flour
Oat flour VS Whole-wheat flour
Walnut soy milk
I liked it. But I’m not gonna lie, I much prefer the second version. That was the first time I used coconut flour and that was interesting, but I missed the flavour of pie crust. Loved the filling though. For both. Of course.
This is a really a go-to recipe for every time you have a little moment to make your crust, but no time in the morning/afternoon (am I the only one to have breakfast that late?) and you can bake it while doing something else: as it holds perfectly its shape, you don’t have to check it every five seconds.

If you want, feel free to add some frozen spread of you choice: I added frozen Biscoff spread, it’s amazing paired with apples as it is a cinnamon spread.

Apple pie {For One} -Vegan-
This is a great recipe to make ahead for breakfast: make your crust the night before and wake up making a vegan apple pie for one in the morning!
Ingredients
Dry ingredients;
- 16 g all-purpose flour -or coconut flour- 2 leveled tbsp
- 16 g oat flour 3 tbsp + 1 tsp
- 1/4 tsp baking powder
- 5 g granulated sugar 1 tsp
Wet ingredients;
- 34 to 50 g almond -or soy or skimmed or whole milk- 2 to 3 tbsp
- 3 drops vanilla extract
Filling;
- 1 medium apple -peeled and cubed-
- 1 tbsp cornstarch
- 1 tbsp honey -or golden syrup-
Instructions

With a spatula or spoon, mix your flours, baking powder and sugar.

Add the milk and vanilla extract and mix until combined. Don't overmix your dough though.

Place in the fridge for at least 45 minutes.

Meanwhile, make your filling:
Fill the first quarter of a a medium saucepan with water, add your apple, cornstarch and honey and cook on medium-high heat for about 10-15 minutes or until the apple is tender.

When ready to make your apple pie:
Preheat the oven to 400°F (210°C).

In a floured surface rolled out your crust in a circle.

Add the filling and close you dough like a pasty/ravioli. Pinch the edge well: you can make marks with a fork to make sure you apple pie is closed and the filling won't come out.

Bake for about 7 minutes, then turn down your oven to 350°F (180°C) and bake for 7-8 minutes more or until light golden brown. Enjoy with cream!
