These brownie bars are made with a banana and does not contain chocolate. They are so easy, burst with flavor and are perfect for any brownie craving.
Preheat the oven at 320°F and line a long loaf pan with aluminum foil or parchment paper, leaving an overhang on the sides to lift the finished brownies out.
For the brownie:
In a medium bowl, whisk the mashed banana with the sugars.
Add the slightly cooled melted butter and vanilla extract to the bowl and mix well.
Finally, add the flour and cocoa powder and mix just until incorporated.
Pour half of the batter in the pan, trying to spread it everywhere evenly.
For the filling:
With a hand-held or stand mixer fitted with a paddle or whisk attachment, beat the cream cheese and butter until smooth., about 30 seconds.
Add vanilla and the half egg and continue beating until incorporated.
Slowly add the sugar, and when incorporated, add the peanut butter. Beat until smooth.
Spread the filling on the batter (in the loaf pan) as evenly as you can.
Pour the other half of the brownie batter on the filling, always as evenly as possible.
If you want to, put a half of a peanut butter cup for each serving.
Bake for 25-30 minutes, not more in order to have a beautiful fudgy brownie.
*For bigger slices, cut the brownie in 6.
**These bars are amazing after one day in the fridge.
***You can double the filling recipe to make a frosting (after the brownie is completely cooled).
