Ingredients

For the base:

  • 22 g all-purpose flour 3 leveled tbsp
  • 14 g oats 3 tbsp
  • 1/4 tsp baking soda
  • 1/2 tsp cinnamon
  • 13 g granulated sugar 1 tbsp
  • 13 g brown sugar 1 tbsp
  • 1 pinch salt
  • 21 g melted butter 1 tbsp + 1 tsp -before melting-

For the filling:

  • 10 g granulated sugar 2 tsp
  • 10 g brown sugar 2 tsp
  • 1 pinch cinnamon
  • 1 pinch all-spice
  • 17 ml whole milk 1 tbsp
  • 60 g pumpkin purée 1/4 cup +1/2 tbsp or 4 tbsp
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat the oven at 350°F (180°C).

  2. Grease and line a 1.5-inch x 3.5-inch pan.

    Make sure to line the bottom with parchment paper or a silicon mat (if you're using bottomless pan), and that the four sides are lined with parchment paper (after greasing the sides with butter or cooking spray).

  3. For the base:

    In a medium bowl, with your hands or a pastry cutter/fork or a blender, mix the ingredients except the melted butter.

  4. Then add melted butter and mix with a fork or your hands until a dough forms.

  5. Place the 3/4 of the base in the pan.

  6. Bake for 7 min while you prepare the filling:

    Whisk the sugars, cinnamon and all-spice. Add the whole milk, beaten egg, vanilla and pumpkin purée and whisk until well combined.

  7. Remove the base from the oven and pour the filling on it.

  8. Bake for 7 minutes and remove from the oven. Sprinkle the base remaining and bake for 10 minutes. Turn the oven off and let the bar for one minute.

  9. Remove from the oven and let cool on the counter for 1 hour. You can then enjoy it but I would recommend to place it n the fridge for an hour for best results. Enjoy!
