Almond Scone {For One} -Vegan Version-

  • 45 Almond flour about 1/2 cup
  • 30 g All-purpose flour 1/4 cup
  • 1/4 tsp baking powder
  • 45 ml almond milk 3 tbsp
  • 1 tbsp honey or golden syrup or any sweetener of your choice -to taste-


  1. Preheat the oven at 420°F (220°C) and grease a silicon mat or prepare a parchment paper in a baking mat.

  2. In a little bowl, mix the flours and the baking powder.

  3. Fold in the almond milk and honey (if desired) with a rubber spatula and mix everything until well incorporated but not over-mixed. When a dough forms, you can finish with your hands. 

  4. Sprinkle your parchment paper with sugar and begin to work and shape your dough.

  5. Shaping

    Form a rectangle shape and flatten with your (floured if you want to be absolutely sure it doesn't stick but I don't use flour) hands. Fold the widths and then the lengths; Flatten with your hands and turn back your dough. Shape with a round cookie cutter or form a croissant with your hands (like the photo above in the post).

  6. Bake for 3 minutes and then turn your oven down to 300°F (150°C) and bake for a further 8 minutes or until a light golden brown. Remove from the oven or it will dry out. Enjoy!
