Healthy, vegan and of course delicious oat bars made with Biscoff, homemade applesauce and carrots.
Preheat the oven at 350°F (180°C) and prepare a 8x8" square pan with parchment paper.
Whisk the oats, brown sugar, baking powder, salt and cinnamon together. Set aside.
In a medium bowl, whisk golden syrup and spread.
Add the mixture to the oats and mix with a spatula just until incorporated.
Add the applesauce and the carrots. Continue mixing with the spatula.
Bake for 35 minutes until lightly browned and then remove from the oven.
Let cool for at least 1 hour. You can speed up the process by putting the pan in the fridge several minutes after removing it from the oven.
You can glaze them with Biscoff spread as I did, simply micro-wave it in a glass
bowl for 30 seconds. Stir and pour it on the bars. Spread with a rubber
